Spend an evening slowing down with Despacio Mezcal, an artisanal mezcal born in Oaxaca and built around the simple idea that the best things should not be rushed.
Despacio invites guests to pause, savor, and experience mezcal as something more than smoke in a glass. It is a spirit shaped by patience, agave, fire, earth, and time. Crafted for sipping, Despacio offers a smooth and expressive profile with gentle sweetness, balanced acidity, and a delicate touch of smoke that lingers without overwhelming the palate. Rather than chasing intensity for its own sake, Despacio leans into elegance and approachability, allowing roasted agave, subtle earth, citrus, herbs, florals, and soft smoke to unfold gradually with each sip.
For this dinner, Chef Bijan and Sous Chef Rodolfo, along with our bar team, will build the pairings around the spirit of Despacio itself: intentional, layered, and meant to be enjoyed slowly. Each course will explore a different side of mezcal, from bright and refreshing moments to deeper, richer flavors that echo the warmth of roasted agave and the soul of Oaxaca. And your host of the evening, the owner of Despacio himself, Juan Morales Esquer. Some pairings will highlight Despacio’s softer, citrusy, and herbal qualities, while others will lean into smoke, spice, texture, and richness.
The goal is not simply to match food and mezcal, but to create a progression that gives each pour room to breathe and each dish a chance to tell its part of the story. Guests will be encouraged to enjoy select pours neat in order to appreciate Despacio’s balance, structure, and lingering finish. The evening will move with purpose, from fresh and vibrant to warm and soulful, celebrating mezcal as a spirit of patience, craft, and connection. This is an invitation to slow down, savor the moment, and experience Despacio the way it was meant to be enjoyed: unhurried, intentional, and shared.
