Produced in Bardstown by Heaven Hill Distillery, Elijah Craig is celebrated for its patient barrel aging, traditional mash bill, and the deep influence of heavily charred oak. Often called the “Father of Bourbon” in tribute to the 18th-century preacher and distiller after whom it is named, Elijah Craig’s identity centers on barrel character — caramelized sugar, toasted oak, dark vanilla, baking spice, and subtle smoke layered over a full, rounded body.
From the dependable Small Batch to the powerhouse Barrel Proof releases and specialty Toasted Barrel expression, each bottling highlights how time and char shape bourbon’s flavor. For this dinner, Chef Bijan and our bar team take a different approach: rather than simply pairing bourbon with food, each course is built around a distinct element of Elijah Craig’s profile — char, sweetness, spice, and proof. Some pours will amplify the richness of the dish; others will cut through with structure and intensity.
