Spend an evening exploring the expressive, terroir-driven world of Tequila Ocho, one of the most respected names in modern tequila.
Created by Carlos Camarena and Tomas Estes, Ocho was founded on the idea that tequila can speak to time and place with the same nuance often associated with fine wine. Each release highlights Blue Weber agave from a specific estate in the Highlands of Jalisco, allowing the character of the land, harvest, altitude, soil, and vintage to shine through in the glass. Unlike tequilas built around heavy additives or a uniform house style, Tequila Ocho focuses on purity, tradition, and transparency. The agave is harvested at full maturity, cooked slowly, fermented with care, and distilled in a way that preserves the natural personality of each field. The result is a lineup that can move from bright citrus, fresh herbs, and cooked agave to deeper notes of pepper, minerality, baking spice, and gentle oak depending on the expression.
For this dinner, Chef Bijan & Sous Chef Rodolfo, along with our bar team, will approach the pairings with the same sense of place and intention that defines Ocho itself. Each course is designed to highlight a different side of the tequila, whether through contrast, harmony, brightness, spice, richness, or texture. Some pairings will draw out the fresh agave and citrus-driven qualities of the pour, while others will lean into earthier, roasted, or peppery notes to complement the dish.
Guests will be encouraged to enjoy select pours neat in order to fully appreciate the craftsmanship, structure, and individuality of each expression.
The progression will move with purpose, from crisp and vibrant to richer and more layered, showcasing the remarkable range that tequila can offer when made with patience, tradition, and respect for the land.
This premium Tequila Ocho dinner includes a welcome cocktail, and 4 courses paired with 4 generous pours from our Tequila Ocho lineup. $125 per ticket plus tax and gratuity. Ticket sales are final.
